Domaine Guy & Yvan Dufouleur was established on the slopes of Nuits-Saint-Georges in 1596, and is currently managed by Yvan Dufouleur and his uncle Xavier.

The Dufouleur family sold the négociant arm of their business, “Dufouleur Père et Fils,” in 2006, wanting to focus exclusively on estate bottled wines. Four hundred years is a long time for any winery, and through the centuries the family has acquired a whopping 28 hectares of prime vineyard sites extending from Fixin to Santenay. This portfolio includes the exclusive ownership of Fixin Clos du Chapitre Premier Cru. Farming is natural, and cellar work is hands-off.

These sensory, revelatory wines are a must for anyone interested in distinctive Burgundy.

Château Tasting

Very intense, deep, black cherry hue. Complex nose with subtle aromas of black fruit (blackcurrants, blueberries, etc.), truffles and liquorice. It takes on notes of fur, musk and other “wild” aromas with age. Forthright on entry to the palate, with power, fat, pronounced yet fine tannins and lovely length.

Vinification Hand-harvested. Sorted on the vine before picking. Destemmed grapes go into vat via gravity flow. Addition of enzymes, yeasting, one week’s cold pre-fermentation maceration, daily punching of the cap, hot final maceration.
Elevage 12 months in oak barrels, of which one third are new, malolactic fermentation in barrels, followed by 3 months spent blending in stainless-steel vat. Light, 5-micron filtration in order to create a bright appearance and aromatic purity.
Production 8,000 bottles
Soil Type Very deep clay-limestone containing some marl. Clos located in the north of the Côte-de-Nuits, village neighbouring Gevrey Chambertin, plot situated on a gentle east-facing slope with a 20% gradient. Alt. 320 metres.
