Domaine Guy & Yvan Dufouleur was established on the slopes of Nuits-Saint-Georges in 1596, and is currently managed by Yvan Dufouleur and his uncle Xavier.
The Dufouleur family sold the négociant arm of their business, “Dufouleur Père et Fils,” in 2006, wanting to focus exclusively on estate bottled wines. Four hundred years is a long time for any winery, and through the centuries the family has acquired a whopping 28 hectares of prime vineyard sites extending from Fixin to Santenay. This portfolio includes the exclusive ownership of Fixin Clos du Chapitre Premier Cru. Farming is natural, and cellar work is hands-off.

Notes and Reviews
Pale or yellow gold hue depending on the vintage. The nose expresses honeysuckle and citrus aromas, and even dried nuts such as almonds and hazelnuts with some bottles' age. The wine is forthright on entry to the palate showing fat, lovely complexity and good length.

|Vinification||Hand picked. Pneumatic pressing. Cooling of must, addition of enzymes, settling, yeasting. 1 month’s fermentation in 500l barrels (1/3 new). Daily stirring of lees during fermentation, maintained at 15°C in order to obtain fat, complexity and finesse.|
|Elevage||10 months in 500l barrels after malolactic fermentation, 2 months spent blending in vat. Fining followed by filtration to enhance the wine’s brightness and the purity of its aromas.|
|Soil Type||Fairly poor clay-limestone, piles of lava. Plot situated on the plateau of Les Dames Huguette, a lieu-dit (local spot) overlooking Nuits-St-Georges. Alt. 350 metres.|
