Domaine Guy & Yvan Dufouleur was established on the slopes of Nuits-Saint-Georges in 1596, and is currently managed by Yvan Dufouleur and his uncle Xavier.
The Dufouleur family sold the négociant arm of their business, “Dufouleur Père et Fils,” in 2006, wanting to focus exclusively on estate bottled wines. Four hundred years is a long time for any winery, and through the centuries the family has acquired a whopping 28 hectares of prime vineyard sites extending from Fixin to Santenay. This portfolio includes the exclusive ownership of Fixin Clos du Chapitre Premier Cru. Farming is natural, and cellar work is hands-off.
These sensory, revelatory wines are a must for anyone interested in distinctive Burgundy.
Notes and Reviews
Lovely, fairly sustained, ruby red hue. Pleasant and forthright on the nose with fruity aromas such as blackcurrants, cherries and raspberries. The oak is well integrated, light toasted aromas, mild tobacco and even hints of vanilla. The wine is forthright on entry to the palate with noticeable yet pleasant tannin. Good length and some complexity.

|Vinification||Hand harvested. Sorted destemmed grapes enter vat via gravity flow. Addition of enzymes, yeasting, 1 week’s cold pre-fermentation maceration, daily punching of the cap, hot final maceration. 3 weeks’ vatting. Manual devatting into stainless-steel press.|
|Elevage||10 months in 500-litre oak barrels of which one quarter are new. Malolactic fermentation in barrel, following by 2 months spent blending in stainless-steel vat. Light, 5-micron filtration before bottling.|
|Soil Type||Fairly poor, very stony clay-limestone. Plot situated on the plateau of Les Dames Huguette, a lieu-dit (local spot) overlooking Nuits St Georges. Alt. 350 metres.|
