Domaine Guy & Yvan Dufouleur was established on the slopes of Nuits-Saint-Georges in 1596, and is currently managed by Yvan Dufouleur and his uncle Xavier.
The Dufouleur family sold the négociant arm of their business, “Dufouleur Père et Fils,” in 2006, wanting to focus exclusively on estate bottled wines. Four hundred years is a long time for any winery, and through the centuries the family has acquired a whopping 28 hectares of prime vineyard sites extending from Fixin to Santenay. This portfolio includes the exclusive ownership of Fixin Clos du Chapitre Premier Cru. Farming is natural, and cellar work is hands-off.

Notes and Reviews
Dense and sustained hue, showing a charming freshness and intensity of fruit right from its youth. Over the years, the palate acquires a full, smooth and silky character. The fruit takes on aromas of macerated cherries, pitted fruit, liquorice, and fine balsamic scents, as well as a few, very fine, animal overtones.

|Vinification||Hand harvested. Sorted destemmed grapes enter vat via gravity flow. Addition of enzymes, yeasting, cold pre-fermentation maceration, daily cap punching, hot final maceration. 3 weeks' vatting. Manual devatting into stainless-steel pneumatic press.|
|Elevage||12 months in oak barrels, of which one third are new, malolactic fermentation in barrels, followed by 3 months spent blending in stainless-steel vat. Light, 5-micron filtration in order to create a bright appearance and aromatic purity.|
|Soil Type||Very stony, light brown soil, white oolite scree. Plot on an east/southeast-facing slope with a 15% gradient in Nuits-Saint-Georges. Alt. 275 metres.|
