Grown at Rising Vineyard, Nillumbik Yarra Valley.
Made from Chardonnay and Savagnin, using the Methode Rurale (also known as pétillant naturel), the simplest and most natural way to make sparkling wine. 40 months lees maturation in bottle, extremely low SO2, and zero dosage at disgorgement. A natural wine - traces of sediment remain.
